A peeling task


The marmalade season is drawing to a close. I’m pleased to report that I helped make about 40 lbs of the stuff. My contribution is limited to chopping the peel and sharpening the knives. Mrs R does the alchemy with the juice, pips, sugar and stuff.

In my view chopping the peel is the most important part of marmalade preparation. It is not a trivial task.

This year I have experimented with some very fine shred and one batch of slightly thicker slicing. They all seem to have good spreading consistency and a fine citrus taste.

Did I mention that it is hard to find paid work at the moment? I’m using the downturn to broaden my skill base.
